Vegetable shortening is a solid or semi-solid plasticised fat made from vegetable oils, used in baking to shorten gluten strands and give pastry and dough a tender crumb. United States labels usually declare its make-up in a bracket after the name: on Pillsbury Grands! cinnamon rolls it is "Vegetable Shortening (soybean oil, hydrogenated palm oil, fractionated palm oil, water, mono and diglycerides, TBHQ and citric acid [preservatives], beta carotene [for color])", which shows the pattern - a liquid oil, hardened and fractionated palm fats to set the consistency, an emulsifier, antioxidants to keep it from going rancid and a colour to make it look like butter.[1]
