Hydrogenated palm oil is palm oil whose double bonds have been saturated with hydrogen, which raises its melting point and makes it firmer and more stable against oxidation than the unhardened oil. Bakers use it inside vegetable shortenings to set the consistency of the fat; Pillsbury Grands! cinnamon rolls declare it in the shortening bracket alongside soybean oil and fractionated palm oil.[1] It is distinct from fractionated palm oil, which is separated by melting point rather than chemically hardened, and from palm kernel oil, which is pressed from the seed rather than the fruit pulp.
