Fractionated palm oil

ingredient

About

Fractionated palm oil is palm oil separated by controlled cooling and filtering into fractions of different melting point, the harder stearin and the softer olein, so that a baker can pick a fat that stays solid at room temperature without hydrogenation. It appears inside the vegetable shortening of Pillsbury Grands! cinnamon rolls, together with soybean oil and hydrogenated palm oil.[1] Unlike hydrogenated palm oil it is a physical separation, not a chemical change to the fatty acids.
