Norwegian trade term for rennet-curd cheese — in practice the pale yellow semi-hard cheeses such as Norvegia — used in contrast to brunost, the caramelised whey cheese. It is the base of Norwegian processed cheese spreads, where it is declared with its own sub-ingredients: milk, starter culture, salt and rennet.[1] The English reading "white cheese" is misleading, since in English that usually means a fresh brined cheese such as feta.
