Barley malt extract

ingredient

About

The syrupy concentrate drawn off malted barley, carrying the sugars and the roasted, biscuity flavour that malting develops in the grain. It is used in cocoa and cereal drinks both as a sweetener and for the malt note, and in ColaCao it is one of the three components of the kola-malted cereal cream.[1] Being made from barley it contains gluten, and Spanish labels set the word cebada in bold for that reason.[1]
