Sodium polyphosphates are the sodium salts of the polyphosphoric acids, used in food as sequestrants that bind trace metal ions and so hold flavour and colour steady. The UK Food Standards Agency lists the group as E452, Polyphosphates.[1] Sodium hexametaphosphate, a mixture of metaphosphates, is the best-known member and is itself called sodium polyphosphate or Graham's salt.[2] The current Brisk Diet Lemon label declares the group name, Sodium Polyphosphates, with the reason To Protect Flavor.[3]
