Sodium lactate is the sodium salt of lactic acid (NaC3H5O3), with a mild saline taste; it is made by fermenting a sugar source such as maize or beet and neutralising the resulting lactic acid.[1] It is authorised in the European Union as the food additive E 325 on the Union list of permitted additives,[2] and is used as a preservative, acidity regulator and bulking agent, sold as a liquid or a powder.[1] Lucozade Energy Caribbean Crush declares it as its acidity regulator.[3]
