Milk permeate is the lactose-rich dairy fraction that passes through the membrane when milk or whey is filtered, and it is used in confectionery in place of milk or whey powder. It is the ingredient declared inside both the milk chocolate and the caramel of the Mars 70 g twin pack on its Ukrainian label.[1] The German label photographed on the same barcode names sweet whey powder from milk in that position instead, and a German retail data sheet for the successor article names "Molkepermeat (aus MILCH)", so the two terms cover the same place in the recipe.[2][3]
