Lactose is a disaccharide of galactose and glucose that makes up around 2–8% of milk by mass; it is a white, mildly sweet solid used in the food industry.[1] Being a milk-derived sugar it is a declared milk allergen; on the Ritter Sport White Hazelnuts label it is printed in bold.[2]
