Emulsifiers (乳化剤) are the general name for agents used for emulsifying, foaming and defoaming; in food they are named emulsifiers rather than surfactants.[1] Japanese labels such as KitKat Mini Uji Matcha print the class name 乳化剤 without naming the substance.[2]
