Coffee as a food ingredient is the roasted, usually ground seed of the fruit of plants in the genus Coffea, from which the beverage of the same name is brewed.[1] Production begins when the seeds are separated from the coffee cherry to give unroasted green beans; these are roasted, which develops the colour and aroma, and then ground before brewing.[1] The roasted bean carries caffeine, which gives the drink its stimulant effect, although decaffeinated coffee is widely sold.[1] Coffee drinking is first reported among the Sufis of Yemen in the middle of the fifteenth century, and until the end of the seventeenth century almost all of the world's coffee came from Yemen; it is now one of the most heavily traded agricultural commodities.[1]
