About
Barley starch, Finnish ohratärkkelys, is starch from the barley grain. Brewers use it as an unmalted adjunct beside malted barley, where it adds fermentable extract without the malt's colour and flavour. It is the third of the four raw materials in Olvi III, listed after water and barley malt and before hops, and the Finnish list capitalises OHRA in the word because barley is one of the cereals containing gluten that must be emphasised in an ingredient list.[1] Suomen Olutopas gives the same four raw materials for the beer.[2]
