About
Anethole, also called anise camphor, is a colourless, fragrant phenylpropanoid widely used as a flavouring substance and occurring naturally in the essential oils of anise, fennel, star anise, liquorice and magnolia blossom.[1] It carries most of the smell and taste people recognise as aniseed. Barely soluble in water but freely soluble in ethanol, it is what makes anise liqueurs turn cloudy when water is added, the ouzo effect; its isomer estragole gives tarragon and basil a related note.[1] It appears on cosmetic labels as a declared aroma component.
