Soy protein is protein isolated from the soybean. It is made from soybean meal that has been dehulled and defatted, which is processed into three commercial grades - soy flour, concentrate and isolate - for food and industrial use; the protein is concentrated in the bean's protein bodies, which hold an estimated 60 to 70 % of the total.[^enwiki-soy] As a soybean product it falls under entry 6 of Annex II to Regulation (EU) No 1169/2011, "soybeans and products thereof", so EU labels must emphasise it in the ingredient list.[^annex2] Sertop's Ser topiony z szynką does exactly that, printing białko sojowe emphasised inside the bracket that opens its 6 % smoked pork ham.[^offphoto]
