Fractionated palm oil is palm oil separated by controlled cooling and filtering into fractions of different melting point, the harder stearin and the softer olein, so that a baker can pick a fat that stays solid at room temperature without hydrogenation. It appears inside the vegetable shortening of Pillsbury Grands! cinnamon rolls, together with soybean oil and hydrogenated palm oil.[^pillsbury] Unlike hydrogenated palm oil it is a physical separation, not a chemical change to the fatty acids.
