Erythritol is a four-carbon sugar alcohol (polyol) used as a food additive and sugar substitute, about 60 to 70 per cent as sweet as table sugar, almost free of calories and without effect on blood sugar; it is made from corn using enzymes and fermentation.[^wikipedia-erythritol] It is authorised in the European Union as sweetener E968.[^e-list]
