Yucca mohave extract is the name US soft-drink labels give to the extract of Yucca schidigera, the Mojave yucca, an evergreen of the southwestern United States and northwestern Mexico.[1] Steroid saponins are produced commercially from the plant and used as a naturally derived food-grade surfactant, which is what the extract does in a cream soda or root beer: it holds the head of foam.[1] The same extract is widely used in animal feed and as a natural deodoriser.[1]
