About
Wine spirit is the grape distillate used to fortify Port. Added to fermenting must it stops the fermentation, so the wine keeps part of its sugar and reaches about 20 % alcohol. The Portuguese ingredient statement of Porto Messias 10 Anos lists it second, as aguardente vínica, after the grapes.[1] Caves Messias describes the step as an alcoholic fermentation interrupted by the addition of brandy, after which the blend is aged in cask for about ten years.[2]
