Wheat is named first among the cereals containing gluten in Annex II of Regulation (EU) No 1169/2011, so EU labels must emphasise it in the ingredient list.[1] In brewed soy sauce, crushed roasted wheat is mixed with steamed soybeans to make the koji that starts fermentation.[2] Kikkoman's English soy sauce label prints it in capitals as the third ingredient.[3]
