Sodium hydrogen carbonate

About

Sodium hydrogen carbonate (sodium bicarbonate, baking soda) is the chemical compound NaHCO3, a salt of a sodium cation and a bicarbonate anion. In baking it is a raising agent: heated, or combined with an acid, it releases carbon dioxide that expands the dough. Its European Union E number is E500.^[1] Lotus Biscoff declares it as its raising agent.^[2]
