Sodium gluconate

About

Sodium gluconate is the sodium salt of gluconic acid, formula NaC6H11O7, a white water-soluble powder valued as a chelating agent.^[1] As a food additive it carries the E number E576 in the Union list of Regulation (EC) No 1333/2008.^[2] On soft drink labels such as Lucozade Energy Orange it is declared as an acidity regulator.^[3]
