Sodium aluminium phosphate acidic is the food additive E 541 of the EU Union list of food additives.[1] It is the slow-acting acid half of a double-acting baking powder: it reacts with the carbonate mainly under oven heat rather than when the dough is first mixed, which lets a batter or a canned dough stand before it is baked. United States labels spell it "sodium aluminum phosphate", as Pillsbury Grands! cinnamon rolls do inside their baking-powder bracket.[2]
