Potassium salt of benzoic acid, E212, a preservative that inhibits mould, yeast and some bacteria in low-pH products below about pH 4.5, where it acts as benzoic acid; it is used in soft drinks, fruit juices and pickles and is approved in the United States, Canada and the European Union.[1]
