Parboiled rice, also called converted, easy-cook or sella rice, is rice partially boiled in the husk by soaking, steaming and drying; the treatment moves nutrients such as thiamine from the bran into the endosperm and gives a firmer, less sticky grain that cooks faster.[1] Uncle Ben's Converted Original rice sold in Canada lists long grain parboiled rice (riz à grains longs étuvé) as its only ingredient.[2]
