Olives are the fruit of the cultivated olive tree, Olea europaea subsp. europaea. The fruit is a drupe, like a cherry or a peach.[1] Raw olives are very bitter, so they must be cured and fermented before they are eaten as table olives. Black or ripe olives are picked at full maturity.[1] Spain is the world's leading producer.[1]
