Invert sugar is a mixture of glucose and fructose made by splitting sucrose; it is about 30 % sweeter than table sugar and helps foods keep moisture and resist crystallising.[1] It appears as "INVERT SUGAR" in the US Toblerone ingredient statement.[2]
