Instant tea is a powdered tea preparation that becomes tea when water is added; the earliest form was patented in the United Kingdom in 1885 as a paste of concentrated tea extract, sugar and evaporated milk, and spray drying later made it possible to dry tea concentrate without cooking away its flavour. The powder on its own is the dehydrated flavour, aroma and colour compounds of tea, to which makers add sugar, citric acid or fruit flavours.[1] Ready-to-drink iced teas declare it either way: PepsiCo's SmartLabel entry for Brisk Diet Lemon lists Tea Powder,[2] while the USDA Branded Foods record of the same barcode has Instant Tea.[3]
