Ferrous gluconate, or iron(II) gluconate, is the iron(II) salt of gluconic acid. It is a black compound often used as an iron supplement.[1] As a food additive it is used in processing black olives, giving them a uniform jet-black colour. In Europe it carries the E number E579.[1]
