DATEM, diacetyl tartaric acid ester of mono- and diglycerides, is an emulsifier used mainly in baking to strengthen the gluten network of dough, and is approved in the European Union as E472e.[1] Gut & Günstig Frühstücksbrötchen declare it as Emulgator: E472e inside their baking agent.[2]
