Cloves are the dried, unopened flower buds of the tropical tree Syzygium aromaticum, picked by hand and dried in the sun, which is where they develop their warm, fragrant aroma; ground, they season broths, marinades, fish, red cabbage and pumpkin as well as fruit spreads, compote and baking.[1] The Fuchs Gruppe declares "Nelken" as the single ingredient of its ground-clove packs and names Indonesia, Madagascar and Sri Lanka as the growing regions, crediting the essential oil eugenol for the spice's strength and keeping quality.[2][3]
