Apocarotenal

About

Apocarotenal, trans-β-apo-8′-carotenal (C30H40O), is an orange to orange-red carotenoid found in spinach and citrus fruits and used to colour fat-based foods, drinks, dairy products and sweets; it has about half the provitamin A activity of β-carotene.^[1] The European Union lists it as the colour E 160e, Beta-apo-8′-carotenal (C 30).^[2] In the United States it is a colour additive exempt from certification that may be used for colouring foods generally at no more than 15 mg per pound of solid or semisolid food or per pint of liquid food, and not in foods with a standard of identity unless that standard allows added colour.^[3] The Kraft Singles Sharp Cheddar label declares it as APOCAROTENAL (COLOR).^[4]
