Sodium stearoyl-2-lactylate is the food additive E 481 of the EU Union list of food additives, the sodium salt of the ester of stearic acid with lactic acid.[^unionlist] In bread and other yeast and chemically raised doughs it works as a dough strengthener and emulsifier: it binds to gluten proteins, which makes the dough more tolerant of handling, and to starch, which slows staling and keeps the crumb soft. United States labels write it "sodium stearoyl lactylate", as Pillsbury Grands! cinnamon rolls do.[^pillsbury]
