Sodium acid pyrophosphate is the acid sodium salt of diphosphoric acid, one of the salts the EU Union list of food additives covers under the group entry E 450, diphosphates, rather than a number of its own.[^unionlist] In baking it is the fast-acting acid of a raising system, reacting with sodium hydrogen carbonate as soon as the dough is wetted, and it is often paired with a slower aluminium phosphate so that some of the gas is released later in the oven. Pillsbury Grands! cinnamon rolls declare it inside their baking-powder bracket.[^pillsbury] It keeps its own page rather than being merged into the E 450 group, because a label naming this specific salt says more than the group name does.
