Modified whey is a dairy ingredient made from whey and declared under that name in the ingredient lists of United States foods such as Pillsbury Grands! cinnamon rolls, where it appears among the ingredients present at 2 % or less.[^pillsbury][^photo2020] It carries the milk allergen, and it is one of the reasons the can states "Contains wheat and milk ingredients".[^pillsbury][^photo2020]

United States federal regulations recognise two whey ingredients with an altered composition as generally recognised as safe for use in food under good manufacturing practice: reduced lactose whey, obtained by removing lactose from whey by precipitation, filtration or dialysis, with no more than 60 % lactose in the dry product,[^cfr1979a] and reduced minerals whey, obtained by removing part of the minerals the same way, with no more than 7 % ash in the dry product.[^cfr1979b] Each is to be listed in a finished food under its own name.[^cfr1979a][^cfr1979b]
