	36	+	Lactic acid is the organic acid 2-hydroxypropionic acid (C3H6O3), authorised as a food additive in the European Union as E 270, whose specification defines it as a mixture of lactic acid and lactic acid lactate obtained by the lactic fermentation of sugars or prepared synthetically.[^eu231] The Food Standards Agency lists E270 Lactic acid among the approved acids and acidity regulators.[^fsa] Commercially it is made by fermenting carbohydrates such as glucose, sucrose or lactose from corn, beet or cane sugar, or by chemical synthesis, so despite the name it is usually not milk-derived, although a lactose feedstock is.[^wiki] United States labels print it as LACTIC ACID,[^label-2025] while Danish labels declare it by number, as in the acidity regulators "E270, E296" of K-Salat potato salad.[^gs1-dk]
