Gellan gum is a food additive authorised in the European Union under the number E418 and listed in the Union list of food additives.[^eu1333] Its specification defines it as a high molecular weight polysaccharide gum produced by pure culture fermentation of a carbohydrate by strains of Pseudomonas elodea, recovered with propan-2-ol or ethanol, dried and milled; the polysaccharide is built from a repeating tetrasaccharide of one rhamnose, one glucuronic acid and two glucoses, substituted with glyceryl and acetyl groups.[^eu231] Drinks use it in small amounts to hold fruit solids in suspension: the ingredient statement a US importer reproduces for Frooti's 200 mL export carton prints it as "Stabilizer (Gellan Gum)".[^ishop]
