## About <!--about-->
Erythrosine, also known as E127 and FD&C Red No. 3, is a red-pink organoiodine dye used as a food colouring, notably for processed cherries.[^wp-erythrosine] The United States FDA banned it in foods in January 2025, with enforcement from 15 January 2027, while Health Canada stated in 2025 that it poses no health risk at the levels in its List of Permitted Food Colours.[^wp-erythrosine] It colours the cherries declared on the Canadian label of Del Monte Fruit Cocktail.[^pack]
