Diphosphates are the food additive E 450 of the EU Union list of food additives, a group entry rather than a single substance: it covers the disodium, trisodium, tetrasodium, dipotassium, tetrapotassium and calcium salts of diphosphoric acid, which a label may declare simply as "diphosphates".[^unionlist] In baking powder they are the acid half of the raising system, reacting with a carbonate when the dough is wetted and heated to release carbon dioxide; Dr. Oetker's Polish sachet declares them first, as "difosforany" inside the class name "substancje spulchniające".[^back2026]
