Butter is a dairy product made from the fat and protein components of churned cream, a semi-solid emulsion at room temperature of roughly 81% butterfat.[^enwiki-butter] It is most often made from cow's milk, but also from the milk of sheep, goats, buffalo and yaks, by churning milk or cream until the fat globules separate from the buttermilk.[^enwiki-butter] Salt has been added to butter since antiquity to help preserve it, a role now largely taken over by refrigeration, so salt in modern butter is mostly a matter of taste; unsalted butter leaves it out.[^enwiki-butter] Butter firms up under refrigeration, spreads at room temperature and melts between 32 and 35 °C.[^enwiki-butter]
