The flavouring that turns a black tea into an Earl Grey. Traditionally it is the fragrant oil pressed from the rind of the bergamot orange, Citrus bergamia, a citrus fruit the size of an orange and probably a hybrid of lemon and bitter orange, whose extracts are also used in perfume and cosmetics.[^wiki-bergamot] Many Earl Greys, however, use other natural or artificial flavourings or synthetic oils instead, because they are cheaper and keep longer, and a label that says only "flavouring" does not say which was used; the vegan and vegetarian status is therefore recorded as uncertain.[^wiki-earlgrey] The Twinings Original Earl Grey tin declares it as arôme bergamote and bergamotaroma, at 1%.[^pack-back]
