Arabica coffee is the seed of Coffea arabica, a flowering shrub of the madder family Rubiaceae and the first species of coffee to have been cultivated.[^wikipedia-arabica] It accounts for roughly 60% of world coffee production; most of the remainder is robusta, Coffea canephora, which is more bitter and carries more caffeine, so a declaration of "100% Arabica" on a pack is a claim about the blend's composition rather than its origin.[^wikipedia-arabica][^lavazza-oro] Wild populations survive only in the forests of southern Ethiopia, South Sudan and Yemen, though the plant is now grown across the tropics.[^wikipedia-arabica] The fruit is a drupe called a cherry, ripening red to purple, and normally holds the two seeds that become coffee beans.[^wikipedia-arabica]
