Acetylated monoglycerides are a US food additive permitted under 21 CFR 172.828, made either by interesterifying edible fats with triacetin and then distilling or steam stripping the product, or by acetylating edible monoglycerides directly with acetic anhydride; the regulation sets a Reichert-Meissl value of 75 to 200 and an acid value below 6 and limits use to the amount needed for the intended effect.[^cfr172828] The 2.39 oz cup of Velveeta Shells & Cheese Original lists them after maltodextrin, outside the pasta and the cheese sauce.[^label2023]
